Baked Creamy Chicken Taquitos

Ingredients:
1/2 cup (4 oz) cream cheese (light works fine in this recipe)
1/3 cup green salsa
1 Tablespoon lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon dried cilantro
2 Tablespoons sliced green onions
2 cups shredded cooked chicken
1 cup grated Pepperjack cheese
About 20 (6 inch) flour tortillas
Salt
Cooking spray

Directions:
Heat oven to 425 degrees. Line a baking sheet with foil and lightly coat with cooking spray. Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and garlic powder. Stir to combine and then add cilantro and green onions. Add chicken and Pepperjack cheese and combine well. Place 2-3 Tablespoons of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges and roll it up as tight as you can. Place seam side down on the baking sheet. Lay all of the filled taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray and sprinkle some salt on top. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Fiber One Chocolate-Peanut Butter Haystacks
1 bag (12oz) semi-sweet choc chips (2cps) 
1/2 cup of natural or reduced fat peanut butter 
1 pouch (3 3/4 cups) Fiber One original bran cereal 

Combine chocolate and peanut butter in microwave for 1min. Stir and add in for 30 more seconds and stir until smooth. Add the bag of cereal to the mix until it is all coated. Drop mixture by rounded teaspoonfuls onto waxed paper and in fridge until firm. 

1 cookie= 70 cal, fat 3.5g, carb 9g, diet fiber 3g, sugar 4g

Potato Soup

You can cook the veggies in the crockpot and add the sauce later or just cook the veggies over the stove. It's up to you.

6-10 potatoes (depending on size)
2 stalks celery
2 cups chopped carrots
1 med. onion chopped

Put veggies in crockpot with 2 1/2 cups water for about 4 hours on low or until done. (You know your crockpot)
Or just boil veggies in a large pot of water over the stove.

If cooking in the crockpot, wait until the veggies are done before beginning sauce. If cooking on the stove, make sauce while the veggies are cooking.

Sauce:
Melt 2 sticks butter in a medium sauce pan. Stir in 2/3 cup flour. Add 4 chicken bouillon cubes and 1-2 cloves minced garlic. Slowly stir in 2 pints half and half (you can substitute with 1 pint half and half and 2 cups skim milk for a less fattening soup. It still tastes amazing!) Add 1 cup shredded cheddar cheese, stir until combined. Add to crockpot along with 1/4 to 1/2 lb. cooked and crumbled bacon. If cooking over stove, add 2 cups of the vegetable water to the sauce and stir until combined. Drain vegetables and return them to the pot adding sauce and bacon and keeping on low heat until ready to serve stirring occasionally.
